4 x ready-made tortillas, such as Old El Paso Flour Tortillas, available from supermarkets
4Tbsp.
caramelised red onion marmalade

(9oz) spinach, wilted in a pan
100g
(3½oz) each roasted mixed peppers and marinated artichokes, chopped
125g
(4oz) goat's cheese, crumbled
25g
(1oz) freshly grated Parmesan
2tsp.
fresh thyme leaves
Directions
Step 1Preheat the oven to 180°C (160°C fan) mark 4. Put a tortilla on baking sheet and spread over 1tbsp onion marmalade. Cover with a third of the spinach, roasted vegetables and goat's cheese.
Step 2Top with another tortilla and layer up the mixture twice more, finishing with the final tortilla. Top with the remaining onion marmalade, the Parmesan and thyme.
Step 3Bake in the oven for 15min until crisp and golden. Slice and serve with a green salad.
