If you love a martini then you'll definitely want to try this rhubarb flavoured version.
Use the freshest and most vibrant stalks of seasonal rhubarb you can find in the shops to make the rhubarb simple syrup and then any leftovers you have can be added into so many more cocktails. We'll be using ours in a gin and tonic or simply added into a glazz of fizz for a simple tipple.

Ingredients
600g
(1lb 5oz) pink rhubarb
300g
(11oz) granulated sugar
ice
40ml
chilled vodka
Directions
Step 1
Put rhubarb, sugar and 1.1 litre (2 pint) water into a large pan. Simmer, covered, on a low heat for 20min until pulpy. Strain mixture through a sieve, discard pulp and chill the syrup.
Step 2
For each cocktail, fill a shaker with ice, pour in 75ml (3fl oz) rhubarb syrup and chilled vodka. Shake until well-chilled, then strain into a martini glass.
GH Tip
Use only the pink parts of the rhubarb for this bright cocktail – the white parts can be used in crumbles or to make fruit compotes.
