onion, finely chopped

mixed colour peppers, finely sliced

garlic cloves, crushed
3
cm piece fresh root ginger, peeled and grated
1Tbsp.
tomato purée
500g
skinless chicken breasts, cut into finger-sized strips, see intro
400g
tin chopped tomatoes
Handful coriander, leaves picked

ground cumin
1tsp.
paprika
1tsp.
garam masala
1tsp.
turmeric
Directions
Step 1Heat the oil in a large wok or deep frying pan over medium-high heat. Add the onion and fry for 5min, until golden brown and starting to soften. Add the peppers and fry for a further 5min, stirring occasionally. Add the garlic, ginger, spice mix and tomato purée and fry for 2min.
Step 2Add chicken and fry, stirring occasionally, for 5min, until opaque.
Step 3Add the tomatoes, 100ml just-boiled water and plenty of seasoning; stir well. Simmer for 5min, until chicken is cooked through. Stir through the coriander and serve with rice or naan, if you like.
