This slow cooker ham recipe uses a few festive ingredients including star anise and black pepper, but it's coating the joint with Coke that gives it the real flavour.
Coca-Cola ham might sound bizarre at first, but trust us, it is delicious! The addition of the sweet fizzy drink brings out the flavour of the ham joint, and results in tender meat with very little hands-on time.

Ingredients
1
kg unsmoked, boneless gammon joint
2l
coca cola
150g
dark brown sugar
4
star anise
10
black peppercorns
1Tbsp.
treacle
1/2Tbsp.
mustard powder
50ml
honey
Directions
Step 1
Put gammon joint into slow cooker and add the cola, sugar, star anise and black peppercorns. Top up with water if needed. Cook on high for 4hr.
Step 2
Whisk together the treacle, mustard powder and honey until fully combined. Once the ham is cooked, drain and discard the cola and allow the ham to cool. Preheat oven to 200°C (180°C fan).
Step 3
Once the ham is cooled remove the skin, leaving some of the fat behind and score it. Brush over the glaze mixture and put into oven. Cook for 25-30min until golden brown. Keep brushing the glaze over regularly until it is all used up. Remove from the oven and allow to cool before slicing.
GH TIPS:
Not keen on Coca-Cola? You could try Irn-bru or ginger beer for a similar taste. The gammon is neutral enough to go well with a range of soft drink flavours.
You can make a glaze with mustard and honey to cover the ham with once cooked. It's a little extra effort but well worth it.
