100g
gingernut biscuits
25g
butter, melted
250g
full-fat cream cheese, at room temperature
4Tbsp.
icing sugar, sifted
100ml
double cream
finely grated zest 1 large orange, plus extra pared zest, to serve
Directions
Step 1preserved lemon, seeds removed and finely chopped1 In a food processor whizz the biscuits until fine crumbs. Alternatively bash in a food bag with a rolling pin. Add the butter and pulse/mix to combine. Divide between 6 x rough 150ml glasses or ramekins and press with the back of a spoon to level. Chill until needed.
Step 2In a large bowl using a handheld electric whisk, beat the cream cheese, icing sugar and double cream until light and fluffy. Add the orange zest and preserved lemon and fold in using a large metal spoon or spatula. Divide between the glasses/ramekins. Chill for 4hr (up to 24hr), to firm up slightly.
Step 3Sprinkle over the pared zest and serve.
