Ingredients
435g
tin pineapple slices in juice
500ml
tropical juice
500ml
coconut water
300ml
coconut rum
2
vanilla pods
Directions
Step 1Strain the tinned pineapple juice into a large jug, reserving the slices for garnish. Add the tropical juice, coconut water and rum to the jug. Split the vanilla pods in 1/2 lengthways and stir into the jug. Cover and chill for at least 1hr (up to 24hr).
Step 2When ready to serve, divide the rum mixture between 8 tall glasses. Garnish with pineapple slices and the vanilla pods (cut into shorter lengths), if you like. Serve.
GET AHEAD:
Prepare to end of step 1 up a day ahead. Chill. Keep pineapple slices in an airtight container in the fridge. Complete recipe to serve.
If you'd rather decrease the overall coconut flavour, use white rum instead of coconut and scale the recipe up or down as needed, depending on how many guests you're entertaining.
