Ingredients
500g
cranberries, fresh or frozen
100g
light brown soft sugar
100ml
pomegranate juice
2Tbsp.
pomegranate seeds, to serve, optional
Directions
Step 1In a medium pan, mix the cranberries, sugar, pomegranate juice and some seasoning. Bring to the boil over medium-high heat and bubble for 15min, or until most of the berries have burst and the liquid has thickened. Leave to cool completely – it will thicken further on cooling.
Step 2 Whizz with a stick blender until smooth (see GH TIP above) and transfer to a serving bowl. Cover and chill until needed.
Step 3 Garnish with pomegranate seeds, if using, and serve.
GH TIP If you prefer your cranberry sauce with some berry texture, skip step 2.
GET AHEAD Prepare to end of step 2 up to 3 days ahead. Cover and chill. Alternatively, freeze in an airtight container for up to 1 month. To serve, defrost in fridge (if frozen) and complete recipe.
