Jam Parfaits with Grilled Peaches

Swirled with sweet jams, Greek yogurt and heavy cream pair perfectly with charred peaches.

Ingredients

  • 2 Tbsp. lemon juice
  • 2 Tbsp. strawberry or raspberry jam
  • 1 cup raspberries
  • 1 cup blackberries (halved if large)
  • 4 peaches
  • 2 Tbsp. olive oil
  • 1 cup heavy cream
  • 1 cup plain full-fat Greek yogurt

Directions

    1. Step 1In large bowl, whisk together lemon juice and strawberry or raspberry jam. Add raspberries and blackberries; toss to coat. Let stand at least 5 minutes, tossing occasionally.
    2. Step 2Cut peaches into halves; discard pits. Brush cut sides with olive oil; grill on medium until grill marks appear, about 3 minutes per side.
    3. Step 3In another large bowl, with stand mixer with whisk attachment or with hand mixer, beat cold heavy cream and Greek yogurt until soft peaks form.
    4. Step 4Spoon berries and yogurt cream into canning jars or glasses, alternating layers. Serve parfaits with peaches.

Nutritional information (per serving): About 440 cals, 10 g protein, 33 g carbs, 33 g fat (16 g sat), 6 g fiber, 40 mg sodium.
