Tri-tip, the triangle of meat at the bottom of a sirloin, tastes even better with a paprika and brown sugar rub.

Ingredients

  • 1 Tbsp. olive oil
  • 1 Tbsp. brown sugar
  • 1 Tbsp. ground cumin
  • 1 Tbsp. smoked paprika
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1 boneless beef tri-tip roast (about 21/4 lbs.)

Directions

    1. Step 1Heat grill on medium.
    2. Step 2In small bowl, combine oil, sugar, cumin, paprika, garlic powder, onion powder, 2 teaspoons salt and 1/2 teaspoon pepper. Rub all over tri-tip, which can be wrapped in plastic and refrigerated up to 1 day.
    3. Step 3Grill beef 30 minutes or until 125°F on meat thermometer, turning over 3 times. Transfer to cutting board; let rest at least 10 minutes. Thinly slice against grain to serve.

Nutritional information (per serving): About 265 cals, 28 g protein, 3 g carbs, 15 g fat (5 g sat), 1 g fiber, 545 mg sodium.
