Think of this as a spiked watermelon slushie. So delicious!

Ingredients

  • 8 cups seedless watermelon chunks (about 11/2 lbs.), plus wedges for garnish
  • 1 cup light rum
  • 1 cup fresh orange juice
  • 1/4 cup fresh lime juice
  • 1 (12-oz.) bottle ginger beer

Directions

    1. Step 1In blender, puree watermelon until smooth. Pour through fine-mesh strainer into large pitcher; discard solids. Stir in rum, orange juice and lime juice. Refrigerate until ready to serve.
    2. Step 2To serve, add ginger beer. Serve on the rocks with watermelon wedges.

Nutritional information (per serving): About 145 cals, 1 g protein, 23 g carbs, 1 g fiber, 5 mg sodium.
