Ingredients

  • 1 lb. cavatappi pasta
  • 4 Tbsp. unsalted butter
  • 1/4 cup all-purpose flour
  • 2 1/2 cups whole milk
  • 1 lb. American cheese, chopped
  • 1 1/2 cups marinara sauce
  • 2 Tbsp. tomato paste
  • 2 Tbsp. coarse bread crumbs
  • Nonstick cooking spray

Directions

    1. Step 1 Preheat oven to 375 degrees F. Heat lg. covered saucepot of water to boiling on high. Add pasta; cook 5 minutes. Drain well.
    2. Step 2 Meanwhile, in 5- to 6-quart saucepot, melt butter on medium. Sprinkle flour over butter. Cook 1 minute, stirring. Slowly whisk in milk until smooth. Add 1/4 teaspoon salt. Heat to boiling on high, whisking often. Reduce heat; simmer 2 minutes or until slightly thickened, stirring occasionally. Reduce heat to medium-low. Gradually stir in cheese by handfuls until smooth, letting cheese melt before adding next batch. Whisk in marinara sauce and tomato paste. Add cavatappi; toss to coat well.
    3. Step 3Transfer mixture to 8 ramekins (8 ounces each); top with bread crumbs. Spray crumbs with cooking spray. Place ramekins on foil-lined rimmed baking sheet. Bake 30 to 35 minutes or until sauce is bubbling and crumbs are golden.

Nutrition Information (per serving): About 545 calories, 20 g protein, 59 g carbs, 25 g fat (14 g saturated fat), 3 g fiber, 1,130 mg sodium.
