Ingredients

  • 2 cups all-purpose flour
  • 1/2 tsp. salt
  • 13 Tbsp. butter, cut up and very cold
  • Tbsp. ice water

Directions

    1. Step 1In food processor, pulse flour and salt until combined. Add half of butter; pulse until fine crumbs form. Add remaining butter; pulse until coarse crumbs form. Sprinkle 5 tablespoons ice water over mixture; pulse until just incorporated. Pulse in additional ice water 1 tablespoons at a time until dough just holds together when squeezed. Transfer dough to lightly floured surface; knead gently until dough comes together.
    2. Step 2Divide into 2 equal pieces; pat each into flat rectangle. Wrap tightly in plastic; refrigerate at least 30 minutes or up to 1 day.

Test Kitchen Tip: If dough is very cold and hard, let it sit at room temperature for 10 minutes before rolling it.
