Ingredients

  • 3 lb. beef brisket, trimmed of excess fat and cut into 1-inch chunks
  • 5 cloves garlic, chopped
  • 1/4 cup brown sugar
  • 1/4 cup rice vinegar
  • 1/4 cup soy sauce
  • 3 Tbsp. fish sauce
  • 1/2 tsp. pepper
  • 1 pt. grape tomatoes, cut into halves
  • 1 small red onion, thinly sliced
  • 1/2 cup mint leaves
  • Steamed jasmine rice

Directions

    1. Step 1In 7- to 8-quart slow-cooker bowl, combine beef brisket, garlic, brown sugar, rice vinegar, soy sauce, fish sauce, and pepper.
    2. Step 2Cook on Low 6 to 8 hours or until tender; toss with grape tomatoes, red onion, and mint leaves. Serve with steamed jasmine rice.
