This simple side involves an easy two-step process: Just roast the mushrooms, then toss them in melted chile-garlic butter and blanched green beans.

Ingredients

  • 1 lb.

    mixed wild mushrooms, trimmed

  • 1 Tbsp.

    olive oil

  • Kosher salt and pepper

  • 4 Tbsp.

    unsalted butter

  • 2

    cloves garlic, thinly sliced

  • 1

    red chile, thinly sliced

  • 1 lb.

    green beans, blanched

Directions

    1. Step 1Heat oven to 450°F. On rimmed baking sheet, toss mushrooms with oil and 1/4 teaspoon each salt and pepper and roast until golden brown and tender, about 25 minutes.
    2. Step 2Meanwhile, melt butter with garlic and chile on low, then cook until golden brown, 10 minutes. Toss beans with garlic butter and mushrooms.
