This 10-minute salad adds a savory twist to juicy in-season peaches and nectarines.

Ingredients

  • 1/2

    small red onion, thinly sliced

  • 1 Tbsp.

    red wine vinegar

  • Kosher salt and pepper

  • 1 lb.

    heirloom tomatoes

  • 1 lb.

    yellow peaches or nectarines

  • 2 Tbsp.

    olive oil

  • 1/4 cup

    basil leaves

  • 2 oz.

    feta, broken into pieces

Directions

    1. Step 1In small bowl, combine onion and vinegar with 1/4 teaspoon salt. Let sit 5 minutes. 
    2. Step 2Cut tomatoes and peaches into wedges and arrange on platter.
    3. Step 3Stir oil into onion mixture and spoon over fruit, then sprinkle with basil, feta, and cracked black pepper. 

Nutritional Information (per serving): About 75 calories, 4.5 g fat (1 g saturated), 2 g protein, 165 mg sodium, 8 g carbohydrate, 2 g fiber
