Ingredients

  • Kosher salt 

  • Pepper

  • 3 lb.

    green beans, trimmed

  • 2 cups

    stale bread, torn into small pieces

  • 3 Tbsp.

    olive oil

  • 4

    scallions, thinly sliced

  • 3 Tbsp.

     cornstarch

  • 1/8 tsp.

    freshly ground nutmeg

  • 2 1/2 cups

    whole milk

  • 8 oz.

    extra-sharp Cheddar cheese, coarsely grated

  • 1/4 cup

    finely grated Parmesan cheese

Directions

    1. Step 1Heat oven to 375°F. Fill large bowl with ice water. Bring large pot of water to a boil. Add 1 tablespoon salt and then, in batches, cook green beans until just tender, 3 to 4 minutes. Transfer green beans to ice water to cool; drain and transfer to large bowl. 
    2. Step 2 In another bowl, toss bread with oil, then scallions. In medium saucepan, whisk together cornstarch, nutmeg, 1/2 cup milk and 1/2 teaspoon each salt and pepper until smooth. Gradually whisk in remaining 2 cups milk and bring to a boil; boil 2 minutes.
    3. Step 3Reduce heat to medium-low and stir in Cheddar, 1/2 cup at a time, stirring until melted before adding next 1/2 cup. Stir in Parmesan to melt. Toss with green beans to evenly coat.
    4. Step 4Transfer green beans to 3-quart baking dish, sprinkle with scallion crumbs and bake until golden brown, 25 to 30 minutes.
