Ingredients
- 6 slice bacon
- 1 cup chopped onion
- 7 cups thinly sliced kale leaves
- 2 Tbsp. red wine vinegar
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1/2 cup crumbled goat cheese
Directions
- Step 1In 12-inch skillet on medium, cook bacon, chopped, 8 minutes. Stir in onion; cook 8 minutes or until tender.
- Step 2In large bowl, toss thinly sliced kale leaves with red wine vinegar, salt, and pepper, and then with bacon mixture.
- Step 3Top with crumbled goat cheese.
