This fresh, herb-forward salad makes a protein-packed lunch or light dinner— no stove required. A silky green goddess dressing (made fast with an immersion blender) coats crisp vegetables, tender beans, and leftover chicken for a zingy, satisfying bowl. It's a great clean-out-the-fridge dish, endlessly adaptable to what you have on hand.

Ingredients

  • 1/3 cup

    plus 1 tbsp. olive oil

  • 1/4 cup

    red wine vinegar

  • 1

    small shallot, quartered

  • 1 cup

    flat-leaf parsley leaves 

  • 3/4 cup

    basil leaves

  • 3 Tbsp.

    tarragon leaves 

  • 3 Tbsp.

    sliced chives 

  • Kosher salt and pepper

  • 8 oz.

    cooked boneless chicken, diced (2 c.)

  • 1

    15.5-oz. can cannellini beans, rinsed

  • 1

    15.5-oz. can chickpeas, rinsed 

  • 2

    Persian cucumbers, quartered lengthwise and chopped

  • 3

    ribs celery, sliced 

  • 1/2

    head fennel, cored and chopped 

  • 8

    pickled hot banana peppers, stemmed and finely chopped

Directions

    1. Step 1In tall wide-mouthed jar or other container, place oil, vinegar, shallot, parsley, basil, tarragon, chives, and 1/4 teaspoon each salt and pepper. Insert immersion blender and place on bottom of jar. Blend on high, without moving blender, 45 seconds. Continue blending, moving immersion blender up and down, until smooth.
    2. Step 2In large bowl, toss together chicken, beans, chickpeas, cucumbers, celery, fennel, banana peppers, and 1/2 teaspoon salt. Add dressing and toss to combine.
