Chopped "Wedge" Salad with Heirloom Tomatoes

Think of this as a deconstructed wedge salad, reimagined for a platter. Juicy heirloom tomatoes and crisp iceberg lettuce pile high with smoky bacon, blue cheese, and a tangy homemade dressing. Make it the centerpiece of a late-summer lunch or a steakhouse-style side.

Ingredients

  • 4

    slices applewood smoked bacon

  • 1/2

    small red onion, finely chopped

  • 2 Tbsp.

    white wine vinegar 

  • Kosher salt and pepper

  • 1/2 cup

    sour cream

  • 1/4 cup

    mayonnaise

  • 2 1/2 Tbsp.

    fresh lemon juice

  • Worcestershire sauce

  • 3 oz.

    blue cheese, crumbled and divided 

  • 1 3/4 lb.

    mixed-color heirloom tomatoes

  • Flaky sea salt 

  • 1

    head iceberg lettuce, cored and chopped into 1-inch pieces

Directions

    1. Step 1Heat oven to 400°F. Arrange bacon on foil-lined rimmed baking sheet and roast, turning after 15 minutes, until golden brown and crisp, 20 to 24 minutes total. Transfer to paper towel–lined plate to absorb excess fat. Transfer to cutting board and roughly chop. 
    2. Step 2Meanwhile, in small bowl, toss onion with vinegar and ¼ teaspoon kosher salt. Let sit, tossing occasionally, until ready to serve.
    3. Step 3In large bowl, whisk together sour cream, mayonnaise, lemon juice, a dash of Worcestershire sauce, and 1/4 teaspoon each kosher salt and pepper. Fold in one-third of blue cheese.
    4. Step 4Slice tomatoes and arrange on serving platter. Season with 1/2 teaspoon flaky sea salt. Add lettuce to dressing and gently toss to coat, then arrange on top of tomatoes.
    5. Step 5Drain pickled onion and scatter over salad along with bacon bits and remaining blue cheese, then sprinkle with cracked pepper.

RECIPE TIP: Look for different varieties of heirloom tomatoes for different flavors and colors! 

RECIPE TIP: Cook your bacon in the oven for less mess on your stovetop.
